The food: Fine dining
Dax Dublin

Sophisticated French-Irish dining in the beautiful basement of an old Georgian house on Pembroke street. French owner Olivier Meisonnave started feeding the masses in 2004 and Dax has been consistently good ever since, but it's had a new lease of life since Chef Graham Neville (formerly of Thornton's and Restaurant Forty One) took over the kitchen in 2017.

Leslie Williams, Irish Examiner

"Both Meisonnave and Neville have been demonstrating mastery of their crafts for years now but in joining forces in Dax they have I think become greater than the sum of their parts. Dax is just about perfect." Food 9/10. Value 8/10.

Lucinda O'Sullivan, Sunday Independent

"...it was a perfectly-judged, firm but moist, tranch of this king of fish, resting on a mere whisper of risotto in a lobster and Madeira sauce. That's what people love about Neville’s food – it's never heavy, he has an incredibly light touch."

Katy McGuinness, Irish Independent

"The changes that the arrival of Graham Neville has brought to Dax are subtle, sophisticated and without pretension, and there is a new freshness at one of Dublin's favourite restaurants that will please customers old and new." Food 8/10. Value 8/10.

Catherine Cleary, The Irish Times

20 May 2017

"So Graham Neville has arrived to do what he does so brilliantly in this smart basement place. If Michelin continue to cold shoulder his cooking then Dax will be the best non-starred restaurant in the city." 4/5
