The food: Pizza, bakery
Gaillot et Gray Dublin Pizza

French pizzeria and bakery, topping pizzas with Emmental instead of Mozzarella. Couple Giles (Gaillot, French) and Emma (Gray, Irish) started off with a food truck in Greystones, which was such a success that they upgraded to permanent premises. Coffee and freshly baked pastries in the mornings, thin based, wood-fired pizzas with traditional French toppings from 4pm.

CRITIC REVIEWS

Catherine Cleary, The Irish Times

"The base is all that is good in sourdough pizza – biscuit thin and crisp but puffed up to airy crisp pockets along the rim where it’s not weighed down by toppings." 4/5

Katy McGuinness, Irish Independent

"There are no wacky combinations, everything is traditional but French. The five that we tried were all terrific, the bases super-thin, blackened in places with that delicious char that you only get from a proper wood-fired oven." Food 8/10. Value 8/10.

Leslie Williams, Irish Examiner

"This fine simple pizza restaurant and bakery does just a few things, but crucially they do them very well using fine ingredients and a lot of style." Food 7/10. Value 8/10.
