The Story
Chef Karl Whelan (ex-Hang Dai) is conjuring up seafood magic at his tiny 20-seater Raw Bar in Niall Sabongi's Saltwater Grocery. The tasting menu twists and turns through courses like caviar served on the back of your hand, verjus topped oysters, deep-fried red fish with watermelon ketchup, and gnocchi with prawn sausage, and whatever night you visit, expect the unexpected.
