Virtuous eating to cleanse away the weekend’s excesses from vegetable-obsessed brothers Jack and Theo Kirwan. Eating well while caring for the environment seem to be their life's purpose, and they're even growing some of their own produce on the Sprout farm in Kildare, meaning it gets to customers' plates faster and fresher. Salads are so colourful and vibrant they're almost bursting from the plate, and change with the seasons.
