Pala Pizza & Trattoria

Chef Rory Shannon moved home to Dublin from London just before Covid 19 with plans of opening his own place, but in the interim helped out at his family's restaurant Bistro One in Foxrock. The pandemic put halt to his plans, so he forged forward taking the neighbourhood bistro in a more modern direction, and opening 'Pala Pizza' outside, serving Roman-style crispy, topped slices, and some choice fried snacks. In early 2022 Bistro One announced it would close, with Shannon Junior taking it over and turning it into 'Pala Pizza and Trattoria'. We're still waiting for the trattoria to open (staff shortages are slowing them down), but expectations in this camp are very high.
