Taste at Rustic Dublin

Euro-Japanese dining (with a hint of Peru) from Dylan McGrath. Diners can finish cooking some dishes at the table, while the somewhat science-y menu is designed to take you through the five tastes – sweet, salt, sour, bitter and umami.

CRITIC REVIEWS

Catherine Cleary, The Irish Times

09 Dec 2016

"...I really like Taste. It’s not too up itself yet not so relaxed they’re slapping it out. Dylan McGrath has pared the food back to where it matters: sensational tastes. And I’ll take flavour over flounce any day." 8/10.

Leslie Williams, Irish Examiner

23 Oct 2015

"This is one of the most stimulating restaurants in the country, serving mostly very tasty and exciting food. Order what sounds good, and pay scant attention to whether it is ‘salt’ or ‘sour’ etc. Crucially do not fuss about which taste you are eating — simply take each dish as it comes and enjoy McGrath’s cooking. He’s pretty damn good at it." Food 8/10. Value 8/10.

Lucinda O'Sullivan, Sunday Independent

"Scallop sashimi (€13), marinated with coriander, served in a long, black dish with creamy foam bubbles and dried bonito flakes was ethereal, as was a little sweet-sour salad of ginger, palm sugar and seaweed (€5)."
