Chef Tom Walsh gave hotel dining a great name when he took the reins at The 1780 in the Portmarnock Hotel and Golf Links in late 2016, converting it from dodgy hotel grub to fine dining destination. He quickly won two rosette status from AA before quietly moving on in late 2017, leaving Thomas Haughton (previously Executive Chef at The Westbury Hotel) to continue his good work. The four course Table d’hote menu comes with lots of little touches, and the upstairs bar has incredible views over Portmarnock beach.
